Cooking With Cilantro

Are You A Cilantro Fan?
I love cooking with fresh cilantro. It adds a wonderful spicy flavor to many dishes. I try to keep fresh cilantro on hand all year round, whether I buy it at the grocery and store it in the fridge, keep a plant on my windowsill during the winter, or replant it in my garden every couple weeks through the summer. Cilantro is a staple flavor for cooking at our house.
Cooking With Cilantro
Many people confuse cilantro with parsley, or think that they are interchangeable in recipes. Cilantro definitely has a distinct tangy flavor of its own.
You might hear cilantro called Chinese or Mexican parsley, the two plants may look alike, but don't let the name fool you, this herb tastes nothing like parsley.
Cilantro is best when it's fresh and green, watch out for yellow, or black leaves, this is a sure sign the cilantro is not fresh and probably lacking in flavor.Even fresh, cilantro only lasts a few days in the refrigerator. It helps to store your fresh herbs in a dry, air tight container to keep excess moisture away from the leaves.
